Recipe - Torrijas de Azahar (Orange Blossom French Toast)

Ingredients

For the Sauce
1 cup Water
1 cup of Sugar
1/2 cup of Orange Blossom Honey
2 tablespoons of Lemon Juice
1 Cinnamon Stick

For the Torrijas
1 1/2 cups milk
1/4 cup Orange Blossom Honey
2 tablespoons Mallafré Gourmet Olive Oil Pressed with Seville Oranges
1 Cinnamon Stick
8 thick slices of Brioche or Baguette
3 Eggs, beaten
Canola Oil or Butter for frying

5 minutes preparation, 5-10 minutes cooking on the stovetop

Instructions

In a small saucepan, bring to boil the ingredients for the sauce. Once the mixture begins to boil, reduce the heat and allow to simmer until the sauce thickens; stir as needed to avoid burning. Remove the cinnamon stick and set aside to cool. To prepare the torrijas, in a saucepan gently warm the milk, honey, olive oil, and cinnamon until the honey is dissolved, remove from heat and allow to cool. In a separate dish, beat the eggs in a shallow dish and set aside. Heat the butter in a pan. Meanwhile, thoroughly coat each piece of bread in the milk mixture and then dip each piece in the egg mixture (be sure the milk has cooled so as to not cook the eggs). Next cook each piece of bread for about 3-5 minutes on each side, until golden brown. Drizzle each piece with the reserved Orange Blossom honey sauce then lightly dust with powdered sugar. Serve and enjoy!
