Recipe - Sauteed Shrimp Salad with Gourmet Lemon Oil Dressing
The refreshing taste of the Mallafre Gourmet Olive Oil Pressed with Spanish Lemons is a captivating compliment to the shrimp in this warm salad!
Ingredients
For the Salad:
- 1/2 cup Arugula or Lettuce
- 1/2 cup Spinach
- 1/2 Cucumber (sliced)
- 2 tablespoon Lemon Infused Olive Oil
- 1/4 Fennel Bulb, chopped (substitute 1/2 cup chopped asparagus if fennel is not available)
- 1/4 cup Raw Shrimp
- 1/4 cup Parsley
For the Dressing:
- 1/2 cup Lemon Infused Olive Oil
- 1/4 cup White Wine Vinegar
- 1 teaspoon Dijon Mustard
- Salt and Pepper to taste
Prep Time/ Cook Time
10 minutes prep time / 5 minutes cooking on the stove top
Instructions
Mix the lettuce, spinach, and cucumber in a large bowl and set aside. Heat pan on medium heat and add the olive oil. When oil is warm, add the fennel (or asparagus) and cook until just tender. Meanwhile, whisk together all of the ingredients for the dressing and set aside. Once the fennel is slightly browned, add the shrimp and cook until they are evenly pink in color. Remove from heat and add the parsley. Toss the lettuce mixture with the dressing and the shrimp mixture. Serve and enjoy!
