Recipe - Paella de Coliflor y Bacalao (Cauliflower and Cod Paella)
It is common for paella, in its multiple varieties, to combine the flavour of the sea and the vegetable garden, cauliflower and cod in the case of this delicious and economical recipe.
Ingredients
1 small Cauliflower, cut into small-medium sprigs
1 lb Cod, chopped into 2 inch pieces
4 Garlic Cloves, crushed
1/4 cup Sofrito Tomato Sauce
1/2 cup Extra Virgin Olive Oil
2 cups Paella Rice
a pinch of Saffron for color and taste
Salt to taste
4-5 cups Chicken Broth or Fish Broth

Prep Time/ Cook Time
10 minutes preparation, 30 minutes cooking on the stove.
Instructions
Heat the olive oil in a paella pan over medium heat. When hot, add the cauliflower sprigs. When about half-way cooked, add the codfish. Continue frying for 5 minutes or so and then add the crushed garlic and Sofrito tomato sauce. Stir lightly and add the rice, a pinch of saffron and broth (whichever is available, chicken or fish). Tip: Add 4 cups of broth if you are usind regular paella rice (Extra Santo Tomas) or add 5 1/2 cups of broth if you are using the Bomba Paella Rice. After bringing it to a boil, add salt to taste. Cook on medium-low heat for about 15-20 or untill rice is tender.
